Korean Lion's Mane Bulgogi
Thin-sliced Lion's Mane steak in a sweet, garlicky gochujang marinade, charred in a hot pan.
Ingredients
Method
- Wrap the steak in plastic wrap and freeze for 30 minutes. Unwrap and slice across the grain into ¼-inch slices.
- In a medium bowl, combine the pear, soy sauce, brown sugar, sesame oil, garlic, ginger and gochujang. Add the marinade and steak to a large zip-top bag. Marinate for at least 2 hours, or overnight, turning the bag now and then.
- Heat 1 tbsp vegetable oil in a cast iron grill pan over medium-high heat. Cook the steak in batches, in a single layer, flipping once, until charred and cooked through, about 2–3 minutes per side. Repeat with the remaining oil and steak.
- Serve straight away, topped with green onions and sesame seeds.
Tip: No grill pan? A large cast iron skillet works too.
